Pea, Mint & Fennel Soup

Ingredients
- * 1.5 Cups coconut milk
- * 1 Cup fresh or frozen peas
- * 1/2 Cup chopped fennel (45g)
- * 1 Zucchini/courgette peeled and chopped
- * 1/4 Cup mint (24g)
- * 2 Tbsp. Lemon juice
- * 1 - 2 Medjool dates without stone
- * 1 Tbsp. Chopped shallot
- * Optional 1/2 Bulb Fennel shaved
- * Peas and fennel to top off the soup and complete the look
- * Season to taste
How To Make
- This is super easy. Put all the ingredients in the blender and blend until smooth. Season to taste, pour and top with extra peas and shaved fennel which you can roast or add to the soup to make it more chunky.
