Radish Salad

So simple to make, I put this together in around 3 minutes. Great as a side salad and packed with vitamins, minerals, trace minerals, digestive aids, kick start your enzymatic processes that help you to absorb your nutrients.

Ingredients

  • 2 Cups thinly sliced radishes
  • 2 Cups of sliced cucumber with or without skin (buy organic if keeping the skin)
  • 2 Tablespoons minced tarragon
  • 4 Tablespoon minced dill
  • 2 Tablespoons of a lite vinegar or 1 tablespoon of flax oil (or both)
  • 1/4 Lemon, juiced
  • Savoury spice blend and or chilli flakes to taste

How To Make

  1. Slice the radishes and cucumber using a mandolin to get nice thin slices, then toss the remaining ingredients in.
  2. Cool in the fridge until you are ready to eat.

Notes

Kep the radish greens for your juices, and soups as they are packed with phytochemical and all the goodness you get from leafy greens. Aids digestion and absorption of nutrients in the digestive tract.

I used an artisan vinegar that was incredibly lite and made of mulberries. See what you can find in the vinegar department.

I did not add the flax oil this time, as I have had my daily omega 3 from my daily supplement.
