Moc “Tuna” Mayo Jacket Potato

Ingredients
- Jacket potato(s)
- 1 Tin of jackfruit or 1 packet soy chunks
- Kombu strip – for sea flavour (or dulse or arame – seaweed strips)
- 1 Onion (chopped)
- 2 Cloves garlic (chopped)
- Sweet Corn (optional)
- 1 Cup pineapple juice
- 2 Tablespoons of soy sauce or umami sauce (soy replacement – recommended)
- Seaweed sheets
- Mayonnaize (Click here for recipe)
How To Make
- Bake the jackets for 1 hour. Bring a pan of water to the boil and cook the jackfruit or soy chunks with the kombu broth. Only needs 5 minutes cooking. Once cooked drain well and start to blend carefully into chunks, Heat the oil in a skillet and add soy chunks until they firm up. Add soy sauce and pineapple juice, once cooked transfer to a bowl. Make sure you keep the texture for the tuna consistency. Then add the mayo, onion, and garlic. Additions could be to add sweet corn and seaweed flakes.
