Lima Bean & Pomegranate Hash

Ingredients
- SAUCE INGREDIENTS
- 1 Garlic clove
- 50g Pine nuts
- Bunch basil
- 3 Tablespoons olive oil
- 1 Lemon juiced
- HASH INGREDIENTS
- 400g Lima beans
- 100g Spinach
- Glug of Olive oil
- 1/4 Cup pre-soaked pumpkin seeds
- 1/2 Pomegranate seeds
How To Make
- In a blender place all the pesto ingredients.
- Cook the beans as per the packet (this you can pre-do). Fry the beans in a pan with the spinach and pesto and sautee with the olive oil. The spinach just needs to wilt, so this is very quick. Season to taste.
- Combine all the ingredients in a large bowl and sprinkle with the pomegranate and pumpkin seeds. This dish is seriously divine.
- Add a simple side salad with it to finish the dish.
