Fava Bean Puree (made with yellow split pea)

We first had this dish in Crete, Greece. It was super tasty and we all craved it going home. I have tried it with both fava bean and yellow split pea and I have to say both are very nice. I do not use oil in mine so the tradition ones is far more creamier. Adding cashew would help give a creamy texture.

Ingredients

  • 200g / 7oz Yellow split peas, rinsed and drained
  • 2 Bay leaves
  • 1 Small onion, diced
  • 1 Teaspoon savory spice blend
  • 3 Cloves of garlic, crushed
  • Juice of 1 lemon
  • Freshly ground black pepper
  • 1 Bumch roughly chopped parsley
  • A few very finely sliced pieces of red onion or diced scallions

How To Make

  1. In a pan add the yellow split peas, onion, savory spice blend garlic and bay leaves.
  2. Cover with enough water to cover the ingredients and top up up as you go along.
  3. Stir frequently.
  4. Cook for 45 minutes or until the beans are soft.
  5. Take out the bay leaves.
  6. Blend with a hand blender or in a nutribullet style blender.
  7. Serve nice and hot with the chopped parsley garnish and slices of the red onion or diced scallions.
