  • 1 Zucchini
  • 1 Cup mashed chickpeas / lentils / dhal
  • 1/2 Avocado
  • A handful lettuce
  • 1 Tomato
  • 1 Small Onion
  • Pinch of salt and black pepper
  • Half of red pepper

How To Make

  1. Mash the drained the pre-cooked lentils, dhal or chickpeas, place in the centre of the sliced cucumber and roll up with the other ingredients. You can use a paste of the mashed up avocado to smear on the cucumber almost like a scraping of butter (but with avocado instead) and this will also hold the ingredients in place too. Season as you like. Spice them up as you like. Easy – super easy.
