Ingredients

  • 1 Cup chickpea flour
  • 1-2 Tablespoons ground flax seed
  • 1/2 Teaspoon onion powder
  • 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon savory spice blend
  • 1/3 Cup nutritional yeast
  • 1/2 Teaspoon baking powder
  • 1 Cup water
  • 3 Green onions
  • 1 Cup small or chopped mushrooms
  • Pepper and herbs to taste

How To Make

  1. Mix the first 6 ingredients in a bowl, and mix with 1 cup of water and mix until smooth. I like to use a hand-held blender to get really smooth.
  2. Heat a good non-stick fry pan and steam fry the veggies. You can either set aside and pour the batter into the pan or add on top of the batter or you can mix in with the batter and pour in. It's up to you.
  3. Cook the omelette until brown each side. serve with tomatoes, spinach or any salad of your choice.
