Barley Oat Pancakes

Ingredients
- 1 cup barley flour
- 1 cup old fashioned oats
- 1 tablespoon baking powder
- 2 cups oat, almond, or nonfat soy mylk
- 1 teaspoon vanilla extract
How To Make
- Mix dry ingredients in a bowl
- Add liquid ingredients until blended. Add water if the batter is too thick.
- Heat a nonstick pan on medium high. When a drop of water sizzles on the surface, the pan is ready for the cakes, which you can make any size you wish. After bubbles form on top of a pancake, flip it over and cook until brown.
- Top with fruit, applesauce, maple syrup, powdered sugar or cinnamon.
