Ingredients

  • Spiced Quinoa
  • 1 Cup quinoa
  • 2 Cups water
  • 1/2 Teaspoon sea salt
  • 1/2 Teaspoon ground cumin
  • 1/2Teaspoon ground coriander
  • 1 Tablespoon harissa
  • 1/2 Teaspoon smoked paprika
  • Salad
  • 7 Medium carrots
  • 3 t
  • Tablespoons raisins or currants
  • 1/3 Cup raw almonds or toasted slivered almonds
  • 1 Spring onion, thinly sliced
  • Large handful each fresh parsley and coriander, roughly chopped
  • Dressing
  • 3 Tablespoons tahini
  • Juice of one orange
  • 1/2 A smashed avocado for a creamy
  • 1/2 – 1 Tablespoon honey
  • Sea salt and pepper

How To Make

  1. Wash the quinoa and add the spices and water and simmer for 15 minutes, or until cooked. Leave to sit with the lid on, (drain any excess fluid). Add in the raisins which will plump up in the warm quinoa
  2. Ribbon or slice the carrots into a bowl The remaining ingredients - almonds, onion and herbs. Mix all the ingredients for the dressing. Add seasoning as needed to the quinoa and the dressing. You can use tahini for a thicker dressing or add water to thin it out, depending on your tastes. Blend the dressing to become smooth.
  3. Mix everything together then serve or refrigerate. Will keep in the fridge for up to 3 days.
