Ingredients
- 1 Small onion, chopped
- 2 Cloves of garlic, smashed
- 1 Cup shiitake mushrooms, sliced
- ½ Jalapeno, sliced (use more or less depending on how spicy you like it)
- 1 Carrot, chopped
- 1 Rib of celery, chopped
- 2 Inch knob of ginger, peeled
- 2.4 Liters clean (distilled, filtered or reverse osmosis) water
- 1/2 Cup coriander
- 1 Cup spinach
- 1 Teaspoon savory spice blend
- ½ Lemon, juice of
- 1 Teaspoon Spirulina
How To Make
- Sauté the onions and garlic and jalapeno in the water. Then add the mushrooms and cook until soft. Set aside. To a large pan add the carrots, celery, ginger, and water. Bring to the boil and simmer for 45 minutes. Turn off the heat, strain the liquid. Then combine the sautéed mushrooms mixture with the coriander, spinach and lemon juice. Season with sea salt and then add the Spirulina. Cook for another few minutes until the spinach is soft. Dish up quick and enjoy. The aroma is divine and your gut will be thanking you for it.
