Hubby's Mean Green Pea Soup
We like it chunky. So we used a hand masher (potato masher) and just gave it a rough mash up. Delicious with some gluten free bread like the seeded loaf and some hummus on it. Or you can blend it smooth.

Ingredients
- 2 Onions
- 1 Bag of Frozen Peas
- 2 Carrots
- 1 Vegetable stock cube
How To Make
- Saute the Onion in a little vegetable broth until slightly browning.
- Add the frozen peas and saute for 5 mins.
- Then add a vegetable stock cube and water just to cover the peas.
- Bring to a simmer and boil for 15 mins.
- After 15 mins get potato masher and mush the peas abit.
- Keep simmering for another 20 mins and mashing.
- Add the chopped up carrots 5 mins before the end to give some colour. Season with pepper and savory spice blend and if you like a bit of heat add some chilli flakes.
- Make sure you taste whilst cooking to get seasoning right as the veg can take a bit more seasoning.
Notes
Add lentils or legumes of your choice like puey lentils, if you want some extra protein.
