Minted Couscous (Glutenous)

Ingredients
- Veggies
- 1/2 Cucumber
- 2 Spring Onion
- 2 Tomatoes
- 1 Red or Yellow Pepper
- 1 Butterhead Lettuce
- Handful of coriander
- 200g Cannellini
- 1 Avocado
- 1/4 Red Onion
- 1/2 Broccoli
- 1/2 Sweet Potato (half cooked)
- Seasoning
- Extra Virgin Olive Oil or Oil of your ch
- Couscous
- 1.5 Cup Couscous
- Handful of Mint
- 3 Cups of Water or follow packet instructions on how to make
How To Make
- Boil the water and pour to the couscous mix. Chopped spring onion, mint leaves, coriander, a dash of black pepper, olive oil, Celtic sea salt and mix well. Cover and set aside. Cut all ingredients in small cubes.
- Season and sprinkle olive oil, dash of cooking spices, salt, black peeper, cumin as you like to flavour. Mix well and serve with the prepared Couscous mix.
