  • Guacamole
  • 1 Avocado
  • Bunch of basil leaves
  • 1/4 Red pepper
  • Juice of 1/2 lemon
  • Seasoning – black pepper, savory spice blend
  • Bean Filling
  • 1 1/2 pre-cooked cannellini beans
  • 1 Onion diced
  • 1 Cup of mushrooms, quartered
  • 1 Clove of garlic
  • 1/2 Red or yellow pepper
  • Optional shredded red cabbage
  • Wraps
  • Kale or iceberg lettuce works well. Romain lettuce also or any leafy that takes your fancy to us as a wrap. To soften the kale you may want to massage with some miso and lemon juice mixed together
  • Salsa
  • 2 Tomatoes, diced
  • 2 Spring onion, chopped small
  • Seasoning to taste

How To Make

  1. To make the beans, sauté the garlic and onion in water, then add the beans. Once heated through add the optional red cabbage, peppers, mushroom and any other veggies of your choice. Season and stir fry for 5 minutes and set aside in a serving bowl.
  2. For the Salsa, chop the tomatoes finely or in small cubes, add the spring onion or coriander (or both) and season. Add the olive oil and mix well. Set aside in a nice serving bowl
  3. For the guacamole, blend the avocado, basil, seasoning and lemon juice. If you like it spicy add the chilli flakes or freshly chopped deseeded chilli. For chunky style then mash together by hand with a fork.
  4. For the wraps add these into a separate serving bowl and put all the bowls on the table. If others in the family would like a meat dish like chicken, you can make a second batch simply by replacing the beans with the meat of your choice.
  5. Enjoy!
