Baked Beans on Veggies

Ingredients
- 1 1/2 Cups haricot beans
- 3 Medium tomatoes
- 1 Steamed sweet potato
- 1 Medium onion
- 2 Cloves garlic
- 1 Red bell pepper
- 2 Cups of sliced button mushrooms
- 2 Tablespoon apple cider vinegar

- 1 Cup of Brussels sprouts
- Ground black pepper
- 1 Vegetable cube
How To Make
- Soak the haricot beans overnight. Next day cook until soft, this will take roughly 30 minutes or to the packet instructions. Then cut the onion & tomato, into small cubes. Mince 2 cloves of garlic. Cut the red bell pepper, mushrooms, and the Brussels sprouts into pieces. Heat a pan and sauté the garlic and onion until brown, add the mushrooms, Brussel sprouts, red bell pepper and add an organic vegetable cube.Season with savory spice blend and pepper to taste. You may want to add a small amount of water, stir fry for 5 minutes and dish up. In the same pan sauté garlic and onion until brown and add tomatoes stir fry for 2 minutes then add the cooked beans and 2 tablespoons of apple cider vinegar. Add some water & cook for 5 minutes. Add the steamed & mashed sweet potato. Season to taste, and voila you have home made baked beans. Serve the beans over the pan fried veggies.
