Ingredients

  • 1/2 Medium yellow onion, chopped
  • 1 Cup button mushrooms, chopped
  • 2 Garlic cloves, finely chopped
  • 1 Cup walnuts
  • 2 Tablespoons tomato paste
  • 1/4 Cup fresh parsley, chopped
  • 2 Tablespoons wheat germ
  • 3 tablespoons quick oats
  • 2 Teaspoons tamari / umami sauce
  • 1/2 teaspoon dried thyme
  • 1/2 Teaspoon paprika
  • 1/2 Teaspoon onion powder
  • 1 Tablespoon nutritional yeast
  • 1 Teaspoon freshly ground black pepper

How To Make

  1. Sauté the onions, mushrooms and garlic in a little water for about four minutes, or until soft. Transfer the sautéed onions, mushrooms and garlic to a food processor; add all remaining ingredients and blend until smooth.
  2. Form into small balls (about the size of a golf ball) and place on a greeced proof lined cookie sheet. Bake covered for thirty minutes. Then uncover, flip meatballs and bake for an additional ten minutes uncovered. Let them cool for five to ten minutes before serving.
