Buckwheat Pancakes

Ingredients
- 1/2 cup buckwheat flour
- 1/2 cup old-fashioned rolled oats
- 1/2 cup cornmeal
- 1 teaspoon baking flour
- 1/2 teaspoon baking soda
- 1 ripe banana
- 2 tablespoons vinegar
- 3 tablespoons maple syrup(optional) / date paste
- 2 cups oat, almond or nonfat soy mylk
How To Make
- Mix dry ingredients together. In a separate bowl mash the banana, add vinegar, maple syrup and mylk. Stir and add to the dry ingredients.
- Heat a nonstick frypan on medium-high. When water sizzles on the pan, it is ready for the pancakes. Cook until bubbles form. Slip, cook another few minutes on the other side, and enjoy eating plain or with fruit or maple syrup.
